Stewed Tomatoes

Sometimes there’s just not enough hours in the day. As a mom who runs two businesses, and works/trains part-time at a martial arts school, some days there’s not enough of me to make a 3-course meal. This flavorful and quick rendition if something grandma used to make, hits the spot EVERYTIME. She called it “stewed tomatoes”. I call it “nostalgic”.

Ingredients
- 1 cup of tomatoes, diced.
- 3 celery stalks
- 1/4 onion, diced
- 1 Tbsp. of garlic, minced
- Penne pasta
Preparation

1Bring water to a boil.

2Add splash of olive oil (this keeps the noodles from sticking together).

3Add noodles to boiling water for 8-10 minutes or until al dente.

4Add tomatoes, celery, onion, and garlic to saucepan and sauté in olive oil over medium heat. Cook for 18 minutes, stirring frequently

5Drain noodles and combine all ingredients together.

6Salt to taste.
