Stewed Tomatoes

Sometimes there’s just not enough hours in the day. As a mom who runs two businesses, and works/trains part-time at a martial arts school, some days there’s not enough of me to make a 3-course meal. This flavorful and quick rendition if something grandma used to make, hits the spot EVERYTIME. She called it “stewed tomatoes”. I call it “nostalgic”.

Ingredients

  • 1 cup of tomatoes, diced.
  • 3 celery stalks
  • 1/4 onion, diced
  • 1 Tbsp. of garlic, minced
  • Penne pasta

Preparation

    Bring water to a boil.
  • 2
    Add splash of olive oil (this keeps the noodles from sticking together).

    Add noodles to boiling water for 8-10 minutes or until al dente.

    Add tomatoes, celery, onion, and garlic to saucepan and sauté in olive oil over medium heat. Cook for 18 minutes, stirring frequently

    Drain noodles and combine all ingredients together.
  • 6
    Salt to taste.
