What do you do when you grow a zucchini that’s bigger than your head? Stuff it! This was delicious!

- 1 large zucchini
- 1 lb. of hot pork sausage
- 1/4 cup of tomatoes (diced)
- 1 half white onion (diced)
- 2 whole green chilies
- 1/4 cup of feta cheese
- 1 tbsp. of minced garlic
- 1/4 tsp. of garlic salt
- Shredded mozzarella
- Fresh Parmesan
1Preheat oven to 350 degrees.
2Wash zucchini thoroughly.
3Cut zucchini lengthwise and scoop out seeds.
4Brown hot pork sausage; drain and rinse.
5Combine pork, diced tomatoes, diced green chilies, feta cheese, minced garlic, onions, and garlic salt in a large bowl. Mix.
6Fill zucchini boats with mixture.
7Top with shredded mozzarella and fresh parmesan.
8Bake at 350 degrees for 25 minutes.
9Turn oven up to 400 degrees and continue to bake for 10 minutes, or until cheese is golden brown.
