Stuffed Zucchini

What do you do when you grow a zucchini that’s bigger than your head? Stuff it! This was delicious!

Ingredients

  • 1 large zucchini
  • 1 lb. of hot pork sausage
  • 1/4 cup of tomatoes (diced)
  • 1 half white onion (diced)
  • 2 whole green chilies
  • 1/4 cup of feta cheese
  • 1 tbsp. of minced garlic
  • 1/4 tsp. of garlic salt
  • Shredded mozzarella
  • Fresh Parmesan

Preparation

    Preheat oven to 350 degrees.

    Wash zucchini thoroughly.
  • 3
    Cut zucchini lengthwise and scoop out seeds.

    Brown hot pork sausage; drain and rinse.

    Combine pork, diced tomatoes, diced green chilies, feta cheese, minced garlic, onions, and garlic salt in a large bowl. Mix.

    Fill zucchini boats with mixture.

    Top with shredded mozzarella and fresh parmesan.

    Bake at 350 degrees for 25 minutes.

    Turn oven up to 400 degrees and continue to bake for 10 minutes, or until cheese is golden brown.
