Jalapeño Poppers

Ingredients

  • 10-12 fresh jalapeños
  • 8 oz. cream cheese, room temperature
  • 1 cup grated cheddar cheese
  • 1/2 tsp. onion powder
  • 1/4 cup breadcrumbs
  • 1 tsp. smoked paprika
  • salt & pepper, to taste

Preparation

    Preheat oven to 400 degrees.

    Slice jalapeños in half lengthwise and de-seed/de-vein them.

    Soak jalapeño halves in a bowl of cold water (this will remove some of the spiciness).

    In a small bowl, mix cream cheese, cheddar cheese and onion powder together.

    In a separate bowl, mix breadcrumbs, paprika and salt and pepper.

    Fill jalapeño halves with about 1 Tbs. of cheese mixture.

    Roll the cheese side of each jalapeño half into the breadcrumbs to give a crunchy top.

    Lay out poppers on a baking sheet covered in parchment paper.

    Bake for 8-10 mins at 400 until they start to bubble.

    Turn oven to broil and let cook for 3-5 minutes until golden and crispy on top.
