- 10-12 fresh jalapeños
- 8 oz. cream cheese, room temperature
- 1 cup grated cheddar cheese
- 1/2 tsp. onion powder
- 1/4 cup breadcrumbs
- 1 tsp. smoked paprika
- salt & pepper, to taste
1Preheat oven to 400 degrees.
2Slice jalapeños in half lengthwise and de-seed/de-vein them.
3Soak jalapeño halves in a bowl of cold water (this will remove some of the spiciness).
4In a small bowl, mix cream cheese, cheddar cheese and onion powder together.
5In a separate bowl, mix breadcrumbs, paprika and salt and pepper.
6Fill jalapeño halves with about 1 Tbs. of cheese mixture.
7Roll the cheese side of each jalapeño half into the breadcrumbs to give a crunchy top.
8Lay out poppers on a baking sheet covered in parchment paper.
9Bake for 8-10 mins at 400 until they start to bubble.
10Turn oven to broil and let cook for 3-5 minutes until golden and crispy on top.
11Serve with ranch or marinara.
